Chicken Dinner
During our Chicken Out campaign we held an auction raising money for getting Tesco to ultimately sell only free-range and organic chicken. Many people contributed generously, and on Tuesday we had the winners of one of our prizes - a chance for up to 7 people to come to River Cottage HQ, have a guided tour of the farm, (paying special attention to the chickens!) watch a cookery demonstration by Head Chef Gill, and then a 4 course chicken and egg themed dinner with canapes in the farmhouse.
For the evening we were joined by Murray, Jo, Lucy, Becky and James Burton, John Hill, Shaun and Sue Taylor. After their tour with Steve Lamb, Gill lead our guests through some of the recipes they would be enjoying as part of the dinner.
We included a range of chicken treats, from the traditional roast for the main course, to recipes which could be used for any left-overs you might have, like chicken and air-dried ham croquettas (yum!) and chicken, barley and kale broth.
It was a lovely night and I'd like to say a special thank you on my own behalf to our guests' generous contributions to the Chicken Out campaign, as well as everyone else who has contributed and supported the buying of free-range and organic chicken.
