Bread Making

If you are a keen home baker, or you are disappointed by the flavourless pap that often passes for bread these days, our Bread Making course is for you. The day course will introduce you to two of our favourite bakers Aidan Chapman and Daniel Stevens, who will explain the ins and outs of making delicious, crusty, characterful bread before getting you to roll up your sleeves and start kneading.

 

Aidan Chapman worked at Londons Celtic Bakery before establishing the Town Mill Bakery in Lyme Regis, where you can now see him at work every morning. http://www.thetownmillbakery.com/. Daniel Stevens is one of our River Cottage cooks whose bread making skills led Hugh to ask Daniel to write one of our River Cottage handbooks, all about bread, which will be published in Autumn 2008.

The day begins at 8.30am at the Town Mill Bakery, run by Aidan. Here, you will be served toast, jam and fresh coffee, after which Aidan will talk about his theory of bread making. Aidan will explain the difference between handmade and supermarket bread and will show you how to make soda bread at breakneck speed. Whilst the soda bread is in the oven, Aidan will talk you through the flours he uses including wheat, rye, spelt and will introduce yeast free sourdoughs.

After tasting your own soda bread, you will head back to River Cottage HQ and Daniel will fire up the clay ovens and get some more dough rising. There will be a break for a two course lunch prepared by the River Cottage cooks, then Daniel will lead you in a practical session where you learn to make the perfect loaf. The course should be finished by about 3.30pm and you can take home your loaves and all the recipes from the day, to start baking at home.

Location: This course starts at the Town Mill Bakery in Lyme Regis (10 minutes drive from RCHQ) and will finish at River Cottage HQ the Dorset/Devon borders. Full address details of H.Q. will be provided once you have booked.

Wine/drink: We are a licensed venue. We also have a Bring Your Own policy and we do not charge corkage. We have a wide selection of the finest organic wines. We will be serving organic cordial and iced water from our own well.

Accommodation: If you need local accommodation, click here for a list of hotels and bed & breakfasts, recommended to us by our customers. We do not have camping facilities but for information on local campsites and self catering accommodation, call the Lyme Regis Tourist Information Office on 01297 442 138. They will be very happy to help.

Age: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines for the safety, comfort and enjoyment of all our guests.

Time: 8.30am - 3.30pm

Tickets: We operate an E-ticket service so you will be sent confirmation of payment and an email confirmation of any places purchased on the course with all the information you need to know including our address, directions and a map.
