Jamie Oliver's apprentices from Fifteen Foundation joined us for our Build & Bake course. Click on this link to see their podcast, and thoughts on the course and day out at River Cottage HQ. See below for a gallery of photos from the course.
Course Description
Our wood fired oven has become an integral part of our kitchen. We not only use if for baking artisan breads, but for roasting our meat, grilling our fish - freshly caught on Catch & Cook, and pizzas for our kids courses.
Because our results have been so fantastic, we wanted to show you how to build your own. Be prepared to work hard, with this very interactive course, as you dig the mud, mould the clay, and knead the dough.
The course begins at 10am with Steven Lamb taking you on a short walk to find and dig local clay. Then everyone will get their feet dirty mixing the muck. By lunchtime the oven will be built.
We will then break for a seasonal lunch, including the traditional wood fired pizzas you have just baked in the oven.
The afternoon will be spent making dough, shaping loaves and baking bread with Daniel Stevens (author of our Bread Handbook)
You will receive an info pack with diagrams and explanations of how wood-fired ovens work; how to build one and how to bake bread in it. We will also include all the recipes from the day.
The day will end around 5pm with loaves for everyone to take home.
Bring wellies and waterproofs, and wear warm old clothes.
Timings: 10.00am to 5.00pm
Hugh availability: Please note - Hugh will not be at this event
Recommended Age: We would advise that this course is only really suitable for 10yrs of age and upwards. Under 16s must be accompanied by an adult. We put these guidelines for the safety, comfort and enjoyment of all our guests.
