Come and join Ray Smith, our River Cottage butcher and the River Cottage team, for a day of feather and fur at River Cottage HQ.
The morning will start with venison and feathered game, which may include pheasant or partridge. Ray will demonstrate different ways to prepare the birds and then you will get a chance to pluck and draw your own pheasant. After a break for refreshments, our River Cottage chefs will demonstrate a variety of dishes including pates and smoked pheasant breasts.
This will be followed by a sit down gamey lunch featuring recipes demonstrated throughout the day.
After lunch we will take a look at rabbit. Ray will demonstrate the process and principles of skinning and butchering the rabbit and again, our chefs will come up with a few gamey treats, including sausages, game terrine and slow cooked casseroles.

Location: This course is run from River Cottage H.Q on the Dorset/Devon borders. Full address details of H.Q. will be provided once you have booked.
Wine/drink: We are a licensed venue. We also have a Bring Your Own policy and we do not charge corkage. We have a wide selection of the finest organic wines. We will be serving Elderflower cordial and iced water from our own well.

Age: We would advise that this course is only really suitable for 12yrs of age and upwards. Under 16?s must be accompanied by an adult. We put these guidelines for the safety, comfort and enjoyment of all our guests.
