This highly specialized tool is specifically made for boning hams and other cuts of meat that have a large centre bone.
The 8.5 inch long stainless steel blade is curved to fit around a bone, so its razor-sharp cutting edge which is roughly 1 inch wide at the end of the knife will scrape off as much meat as possible.
The tang, which extends two-thirds of the way up the orange handle, is held by three nickel-silver rivets, and the cylindrical handle partly balances the long, heavy blade.
