Learn Vegan Cheese Making with Award-Winning Expert Ellie Brown

Spend a delicious day at River Cottage mastering the art of vegan cheese with Ellie Brown, founder of Kinda Co. This hands-on course will teach you to create rich, flavourful dairy-free cheeses using natural ingredients like sunflower seeds.

Your day begins with Ellie guiding you through every step, from selecting the best plant-based ingredients to shaping and setting your cheeses. Along the way, you’ll explore essential techniques such as curd making, flavouring, and forming, gaining the confidence to craft your own cheeses at home.

Over the course, you will make four distinct types of vegan cheese: creamy Ricotta, soft Mozzarella Balls, smoky Cheddar, and herb-infused shaped cheese. The experience is rounded off with a seasonal dairy-free lunch featuring a variety of vegan cheeses to enjoy.

By the end of the day, you’ll take home your handmade cheeses, ready to share and impress, and leave inspired by the endless possibilities of plant-based cheesemaking.

Is this course suitable for me? This course isn’t suitable for those with soy or sunflower seed allergies.  We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. These guidelines are in place to ensure the safety, comfort, and enjoyment of all our guests. ARRIVE AT RIVER COTTAGE

If you choose to walk, enjoy a 10–15 minute stroll from the car park along scenic pathways to the farm, taking in the stunning valley views. A Land Rover lift is available in poor weather or if you prefer not to walk. Once at the cookery school, meet your host and start the day with tea, coffee, and freshly baked treats.

SESSION ONE

After discussing the techniques and ingredients used in vegan cheese making, you’ll jump straight into creating your first cheese of the day, a delicious Ricotta.

SESSION TWO

While your Ricotta sets, you’ll begin making your second cheese: Smoked Cheddar, which results in a wonderfully firm cheese perfect for grating.

SESSION THREE

You’ll be guided through assembling a delicious and visually stunning dairy-free cheese board, perfect for entertaining or any special gathering.

SESSION FOUR

Next, Ellie will demonstrate how to make dairy-free fondue, the perfect sharing dish for a dinner party, which you’ll enjoy as part of your lunch.

LUNCH

After a morning of cheese making, enjoy a refined lunch showcasing your dairy-free cheeses, accompanied by seasonal sides crafted from fresh River Cottage garden vegetables.

SESSION FIVE

Your third cheese recipe is Mini Mozzarella Balls, the perfect melt-in-your-mouth cheese for pizzas or pasta dishes!

SESSION SIX

Before starting your final cheese, you’ll enjoy a tour of the River Cottage farm and garden, where you can pick your own fresh herbs to use in your next cheese.

SESSION SEVEN

The final cheese of the day is a sunflower seed Cream Cheese, which you’ll shape and customise with the herbs and ingredients you’ve picked from the River Cottage garden. You’ll also learn how to use fermentation to culture your cheeses, unlocking a variety of flavours and textures.

DEPARTURE

There will be plenty of time to chat with fellow cheesemakers and the River Cottage team, sharing tips and stories, before heading back up the hill at 5pm with your freshly made dairy-free cheeses in hand.
