Overview

Spend a day perfecting your pastry skills with this hands-on day of learning. You will be taught the tips and tricks to perfecting a variety of types of pastry including – hot water, rough puff, shortcrust and suet and how to use these to create comforting classics.

With expert tuition from the River Cottage chefs, you will discover that baking can be as easy as pie! Throughout your day you’ll bake up favourites such as pork pies, savoury suet pudding, pasties and quiches. And, as with all of our courses, you won’t leave hungry, enjoying some of your efforts for snacks and supper, taking the rest away to feed friends and family at home.

Your day

Make yourself at home

You will meet your host and settle in with tea, coffee and treats fresh from the kitchen.

SESSION ONE

Start your day by mastering hot water pastry and creating the perfect raised pork pie.

SESSION TWO

Next you'll move onto rough puff pastry. You'll use this buttery flaky pastry to make a sumptuous sausage roll

Session three

You'll tackle suet pastry and use this to make a pudding with a deliciously rich filling.

Lunch

Tuck into your suet pudding with a veggie side provided by the chefs as you reflect on your days work (and plan which pastry delight you'll be recreating at home first!)

Session four

Next you'll learn how to make shortcrust pastry, ready to finish it as an indulgent quiche.

Session Five

For the final creation of the day, you'll make a west country classic - the pasty. Filled with a delicious seasonal veg combination.

Departure

Chat to your fellow scholars and the River Cottage team, before heading back up the hill for 5pm with your pastry goods in hand.

Suitability

We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by a paying adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
