Pastry Making Masterclass at River Cottage

Spend a day perfecting your pastry skills with a hands-on workshop at River Cottage. Inspired by our Great Pies book, this fun and informative day will teach you the tips and tricks for mastering a variety of pastry types, including hot water crust, rough puff, shortcrust, and suet. Under the expert tuition of our skilled River Cottage chefs, you’ll learn how to use these pastry techniques to create comforting classics like pork pies, savory suet pudding, pasties, and quiches.

Throughout the day, you’ll bake and enjoy some of your creations. By the end of the course, you’ll have the knowledge and confidence to make your own pastries at home. As always, you won’t leave hungry – you’ll enjoy your efforts for snacks and supper, plus take the rest home to share with family and friends.

Is this course suitable for me?  Due to the varied content, this course isn’t suitable for those with allergies or specific dietary requirements. However, we do offer other courses that cater to gluten-free, vegetarian, and vegan diets. We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. MAKE YOURSELF AT HOME

Meet your host and settle in with tea, coffee, and treats fresh from the kitchen.

SESSION ONE

Start your day by mastering hot water pastry and creating the perfect raised pork pie.

SESSION TWO

Next you'll move onto rough puff pastry. You'll use this buttery flaky pastry to make a sumptuous dessert.

SESSION THREE

You'll tackle suet pastry and use this to make a pudding with a deliciously rich filling.

LUNCH

Tuck into your suet pudding with a veggie side provided by the chefs as you reflect on your days work (and plan which pastry delight you'll be recreating at home first!)

SESSION FOUR

Next you'll learn how to make shortcrust pastry, and our chefs will demonstrate how to use it for an indulgent quiche.

SESSION FIVE

For the final creation of the day, you'll make a west country classic - the pasty. Filled with a delicious seasonal veg combination.

DEPARTURE

Chat to your fellow scholars and the River Cottage team, before heading back up the hill for 5pm with your pastry goods in hand.
