Fish Cookery at River Cottage

Spend the day learning how to prepare and cook a variety of fish and shellfish at River Cottage, guided by our expert chefs.

Your day begins with practical techniques for handling seafood, from selecting the freshest, ethically sourced fish to filleting and preparing whole fish. You will explore essential skills including hot smoking and curing & other methods that bring out the very best flavours and textures from your catch.

With hands-on guidance you will create a fish-focused lunch from the dishes you have prepared, gaining confidence and skills to cook seafood at home. You will also have time to explore the River Cottage farm and gardens, where many of your ingredients are grown, learning how sustainability and seasonality guide every step of our cooking.

This hands-on fish cookery course at River Cottage will leave you inspired and ready to prepare delicious, seasonal seafood dishes at home, full of flavour and ethically sourced ingredients.

Is this course suitable for me?  This course isn’t suitable for those with fish and seafood allergies. We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. These guidelines are in place to ensure the safety, comfort, and enjoyment of all our guests. ARRIVE

If you choose to walk, enjoy a 10–15 minute stroll from the car park along scenic pathways to the farm, taking in the stunning valley views. A Land Rover lift is available in poor weather or if you prefer not to walk. Once at the cookery school, meet your host and start the day with tea, coffee, and freshly baked treats.

SESSION ONE

First, you'll learn how to prepare and cook mussels or clams, depending on the fisherman’s catch!

SESSION TWO

Watch how to prepare a round fish different ways, before the chef creates tasters for the group.

SESSION THREE

Practice makes perfect! You'll then move on to flat fish, learning how to prepare and fillet this different type of fish yourself.

SESSION FOUR

Under the expert guidance of our chefs, you'll pair your flat fish with seasonal ingredients to create a delicious lunch.

LUNCH

Enjoy a refined seasonal flatfish lunch, crafted with care using the freshest ingredients from around the farm.

SESSION FIVE

To ease you into the afternoon, your chef tutor will demonstrate how to pick and cook the crustacean catch of the day.

SESSION SIX

To conclude your day, you'll create another delicious recipe using the fish you prepared earlier.

DEPARTURE

There will be plenty of time to chat with fellow chefs and the River Cottage team, sharing tips and stories, before heading back up the hill at 5pm.
