ARRIVE

If you choose to walk, enjoy a 10–15 minute stroll from the car park along scenic pathways to the farm, taking in the stunning valley views. A Land Rover lift is available in poor weather or if you prefer not to walk. Once at the cookery school, meet your host and start the day with tea, coffee, and freshly baked treats.

SESSION ONE

We'll begin the day by creating some sourdough seed crackers and a selection of festive dips and salsas, perfect for pre-dinner celebrations.

SESSION TWO

Next, you will discover new ways to use winter veg in creative and delicious raw assemblies before you move onto rough puff pastry. You'll use this buttery flaky pastry to make sumptuous veggie sausage rolls or cheese straws.

Light Lunch

Sit down and taste the fruits of your culinary efforts in a delightful lunch

Session three

After your light lunch, you’ll create a series of stunning veggie side dishes that will change your approach to classic Christmas veg.

Session four

Next, learn how to incorporate veg into cakes and puddings and make a spiced root veg and chestnut cake and seeded chocolate tiffin.

Session Five

Your chef will then demonstrate a show-stopping veggie centrepiece as inspiration for your Christmas dinner.

To finish

You and your fellow scholars will tuck into the show stopper created by your chef tutor with Hugh's vegan gravy and some of your sides. Now is a perfect time to ask your tutor any burning questions and reflect on your day.

Brilliant chef for the day, it was amazing thankyou, and really appreciate the hard work and effort that must go on behind the scenes everyday to organise all you do, as well as to do the day itself thankyou.

  4. Diana

  7. Karen

Really good. Great mix of garden walk, demonstrations at the front, and us doing the cooking. Lots of tips during the day. Really good having Sean on hand to support and facilitate. I’m fairly neurodivergent and struggle to do two things at once (listen to instructions and do) but I found it easy to keep up. Excellent day.

  8. Jeanette
