Overview

Join Hugh Fearnley-Whittingstall as he teaches you how to create delicious vegetable dishes and unleash your creativity in the kitchen. We all know we should eat more vegetables and plant-based foods for our health and the health of the planet, but how do you make inspiring, flavourful, and satisfying vegetable-based dishes?

As part of the River Cottage Diploma, the Much More Veg course will guide you in transforming local, seasonal produce into dishes that are as delightful as they are nutritious. Hugh will share a variety of skills and techniques to help you embrace all kinds of vegetables in your cooking. Learn how to maximise the flavour of your veg, discover new ways to turn vegetables into complete meals, and take home a wealth of expert knowledge to impress your family and friends.

A plant-based diet is becoming increasingly essential—not just an ideal worth aiming for. More vegetables mean less room for processed foods and refined carbs, which are widely recognised as leading causes of obesity and health issues. Embracing more veg can also mean reducing meat consumption, benefiting both your health and the planet.

This course is designed to make vegetables and plant foods irresistibly delicious and satisfying. Explore the vibrant world of veg to its fullest, featuring recipes inspired by Hugh’s TV series and best-selling cookbooks, including River Cottage Veg Every Day and Much More Veg.

Highlights

  • Perfectly char and sear chunky summer vegetables on the barbecue
  • Learn to slice, dice, grate, and dress raw vegetables to make them irresistible
  • Combine different vegetables and fruits into hearty soups and hot pots
  • Roast vegetables for maximum flavour intensity and crispy, golden deliciousness
  • Choose from the budget-friendly Peer Option or opt for the Expert Option for personal feedback from the River Cottage team

  2. Diana

“Our chef teacher was enthusiastic, friendly and very helpful and informed. I love cooking and I really enjoyed myself. However long you’ve been cooking you can always learn new things and the dishes we made were all delicious.”

  3. George

Brilliant chef for the day, it was amazing thankyou, and really appreciate the hard work and effort that must go on behind the scenes everyday to organise all you do, as well as to do the day itself thankyou.

  4. Matt

Good level of complexity, tasty recipe and and an engaging chef. Friendly atmosphere. Good to cook sustainably with local and garden produce.

  5. Karen

Really good. Great mix of garden walk, demonstrations at the front, and us doing the cooking. Lots of tips during the day. Really good having Sean on hand to support and facilitate. I’m fairly neurodivergent and struggle to do two things at once (listen to instructions and do) but I found it easy to keep up. Excellent day.

  6. Jeanette

Great food and all fresh and local, fabulous staff, we picked up plenty of tips
