Spend a day learning how to make vegetables more tasty by transforming seasonal fruit, vegetables, and UK pulses and grains into sophisticated and satisfying dishes. In this vegetarian cookery course, you will master a selection of recipes, skills, and techniques that elevate vegetables to the champions of your cooking.
We all know that eating veg is good for us and the planet. This course will teach you how to make vegetables and other healthy plant foods delicious and satisfying. You’ll gain a deeper understanding of seasonality, allowing you to eagerly embrace the new crops each season brings and the rich variety they offer to your cooking.
Throughout the day, under the guidance of our talented chefs, you will learn to prepare a wide range of dishes, including dips and salsas, hearty mains, and a fruit-based sweet pudding. You will enjoy the fruits of your labor for lunch and an afternoon snack, and you’ll leave with some of your creations to share with friends and family.
This course is suitable for both vegetarians and vegans.

You’ll begin the day by meeting your host and enjoying tea, coffee, and delicious treats fresh from the kitchen.
First, you’ll head out to the garden to gather some of the fresh ingredients for your day.
Next, we’ll start making our vegetable stock and explore UK pulses and grains, highlighting how they can enhance your vegetable dishes.
Afterward, we’ll prepare a vibrant vegetable hummus along with a selection of pestos, salsas, and dips to complement our pulses and fresh garden veggies.
Take a break to savour the fruits of your labor so far.
After the break, we'll shift our focus to fruit and dive into preparing both sweet and savoury fruity dishes.
For your final creation, you'll prepare a hearty vegetable main course that you can take home to enjoy in the comfort of your own kitchen.
Before you head home, you'll indulge in the fruity dessert you made earlier and take a moment to reflect on your rewarding day of cookery.
You'll have time to chat with your fellow scholars and the River Cottage team before heading back up the hill at 5 PM.

We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by a paying adult. We put these guidelines in place for the safety, comfort and enjoyment of all our guests.
