Learn Seasonal Sweet Baking Skills at River Cottage Cookery School

Spend a full day exploring the delights of seasonal baking with guidance from our professional baker.

You’ll learn to bake and master a sweet enriched dough, create classic biscuits, and temper chocolate to make elegant bonbons with smooth, indulgent ganache. Watch a demonstration of delicate choux pastry in a Paris-Brest showstopper, and finish by baking your own moist, naturally sweet garden cake packed with seasonal fruit and vegetables.

Along the way, you’ll develop essential baking techniques and skills, including dough handling, biscuit making, chocolate tempering, choux pastry, and cake baking – all using fresh, seasonal ingredients.

Leave with a stunning collection of handmade baked treats and the confidence to recreate these recipes at home.

Is this course suitable for me? This course isn’t suitable for those with dairy or gluten intolerances. We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. These guidelines are in place to ensure the safety, comfort, and enjoyment of all our guests. ARRIVE

If you choose to walk, enjoy a 10–15 minute stroll from the car park along scenic pathways to the farm, taking in the stunning valley views. A Land Rover lift is available in poor weather or if you prefer not to walk. Once at the cookery school, meet your host and start the day with tea, coffee, and freshly baked treats.

SESSION ONE

Begin by diving straight in and creating the enriched dough - you'll come back to this throughout the day.

SESSION TWO

Next you'll learn how to make the perfect biscuit dough, ready to shape and bake.

SESSION THREE

Onto the bon bons as you discover the art of tempering chocolate and making the perfect ganache.

LUNCH

Tuck into a delicious seasonal lunch prepared by the River Cottage chefs.

SESSION FOUR

Next, you'll watch as choux pastry is turned into a show stopping Paris-Brest.

SESSION FIVE

Next, bake a classic teatime treat: a moist veggie cake.

SESSION SIX

To finish, you'll bake your enriched dough, ready to take home and share with family and friends.

DEPARTURE

There will be plenty of time to chat with fellow bakers and the River Cottage team, sharing tips and stories, before heading back up the hill for 5pm with your freshly baked goods in hand.
