This Next Level Diploma is a comprehensive cookery course designed for those with a reasonable level of kitchen confidence or who have completed some or all of the courses in the original River Cottage Cooking Diploma.
Hugh introduces each course and tutor, and his own Next Level Much More Veg course is focused on helping you create outstanding plant-based dishes, perfect for formal entertaining and professional menus.
Most of the courses aim to help you reach this level of culinary excellence, while others provide a solid foundation in topics not covered in the original diploma. These include the basics of making cheese at home, creating a range of fantastic homemade pasta recipes, and optimising your gut health by embracing variety in sourcing and cooking.
