Dive deep into the art of making ferments to support gut health with none other than Zoe founder and expert, Tim Spector.

Tim will be joined by our own Rachel de Thample for a hands-on day of making ferments from Tim’s new book Ferment – where we’ll be focussing on Tim’s approach to making the 4 K’s (kraut, kimchi, kefir, and kombucha) – with lots of tips on how to incorporate these ferments into your day, as well as how to support overall gut health. You’ll also get a pot of rye sourdough to make your own Super Healthy Diversity Loaf. Tim will be joining us for lunch featuring recipes from his books, with plenty of time for questions throughout the day and over a shared meal which include his Mushroom Pâté and Honey Fermented Garlic.

Whether you’re a beginner or an experienced fermenter, this course will inspire you with creative ways to make fermented foods using top-quality, seasonal ingredients.

Is this course suitable for me?  We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. MAKE YOURSELF AT HOME

If you choose to walk, enjoy a 10–15 minute stroll from the car park along scenic pathways to the farm, taking in the stunning valley views. A Land Rover lift is available in poor weather or if you prefer not to walk. Once at the cookery school, meet Tim Spector and Rachel De Thample where you’ll start your day with a gut health boosting welcome snack

SESSION ONE

Learn how to make Tim’s Super Healthy Diversity Loaf and make your own rye sourdough starter to take home.

SESSION TWO

Next, you’ll get a full tour of the River Cottage kitchen garden as we gather ingredients to incorporate into our Sauerkraut and Tim’s take on kimchi (Timchi) before heading back to our 18th-century Threshing Barn where you’ll make a jar of each to take home under Tim and Rachel’s guidance.

LUNCH

Enjoy a stunning lunch, rich with plants from the River Cottage garden and gut health-supporting recipes inspired by Tim’s books, and lots of ferments, of course. Over lunch, you’ll have plenty of time to ask both Tim and Rachel questions.

SESSION THREE

The afternoon will start with guidance on how to make your own kefir. We’ll look at both dairy and water kefir, explaining the differences and how to make plant-based version of dairy kefir. We’ll also demonstrate how to make your own yogurt, including Tim’s soy milk yogurt, and the benefits of homemade vs commercial yogurts.

SESSION FOUR

We’ll dive into kombucha, its benefits and how to make your own at home - with lots of ideas on how to flavour it to replace commercial fizzy drinks.

DEPARTURE

You’ll have time to ask questions and get books signed before wrapping up at 5pm. You’ll head home with copies of the recipes, jars of ferments, and your rye sourdough starter so you can continue your brewing journey at home.
