Fire & Flavour: Master Outdoor Cooking with James Whetlor

Under the expert guidance of James Whetlor this one-day outdoor cooking course will introduce you to the art of live-fire barbecue cooking using wood, charcoal and kamado ovens. Throughout the day, you’ll learn how to light and manage your fire, understand different fuels, and cook a variety of ingredients over flame and smoke to create bold, satisfying dishes.

You’ll begin by preparing and slow-cooking a goat shoulder over the fire while James teaches you the fundamentals of barbecue cooking and heat management. After a tour of the farm and garden, you’ll pick seasonal produce and make flatbread dough ready to cook later in the day.

As the course progresses, James will guide you through a range of marinades, dry rubs, and barbecue sauces, showing how different techniques can transform meat and vegetables cooked over fire. You’ll cook smoky chicken wings, char seasonal vegetables for salads, and bake flatbreads over the flames before sitting down to enjoy your dishes for lunch.

In the afternoon, James will demonstrate how to cook whole fish over fire as well as simple fire-cooked desserts using seasonal fruit. Finally, you’ll gather around the barbecue to enjoy tacos filled with the slow-cooked goat, charred salsa and the dishes you’ve created throughout the day before heading home inspired to cook outdoors with confidence.

Is this course suitable for me?  Due to the varied content, this course isn’t suitable for those with allergies or specific dietary requirements. However, we do offer other courses that cater to gluten-free, vegetarian, and vegan diets. We recommend this course for participants aged 12 and up. Under-16s must be accompanied by a paying adult. MAKE YOURSELF AT HOME

You’ll meet your host and start the day with a warm welcome, enjoying tea, coffee, and freshly made treats straight from the kitchen.

SESSION ONE

Learn how to light and manage your BBQ fire while exploring the differences between cooking with wood and charcoal. James will introduce kamado cooking as you prepare a slow-cooked goat shoulder to cook throughout the day.

SESSION TWO

Take a tour of the farm and garden before picking seasonal vegetables to cook over the fire. You’ll also make flatbread dough ready for baking later in the day.

SESSION THREE

Discover the foundations of BBQ flavour as James guides you through marinades, dry rubs, and classic sauces. You’ll cook chicken wings, char seasonal vegetables, and bake flatbreads over the flames before sitting down to enjoy your lunch.

Prepare a simple fire-cooked dessert using seasonal fruit

Finish the day by building tacos with the slow-cooked goat shoulder, charred salsa, and dishes prepared throughout the day before gathering around the fire for an early supper.

DEPARTURE

By 5 PM, you’ll head back to the car park after a full day of outdoor cooking, fire skills, and unforgettable flavours.
