Do use cheap whisky for this recipe as there is a special pit in hell for those who drink good whisky in any way other than on its own. For those few who do not like blackberries and the many more who do not like whisky there is some good news. Given time – about a year, but two is better – the flavour mellows into something quite its own, not dissimilar from port, and with never a hint of peat bogs and barely a trace of blackberry crumble….

I love the combination of chocolate, prunes and brandy so I doctored the original idea a little. Timing is important here – a minute too long in the oven, or even waiting around to be served, and these little puds lose their lovely gooey centres. But you can prepare them in advance, ready to bake when you want to serve them….

The perfect refreshment on a sunny spring day when fresh rhubarb in season from our preserves and fermentation tutor. Making your own ginger beer is surprisingly easy and extremely satisfying. It takes just over a week to make in total, but the hands-on time is only 5-10 mins every day. The rhubarb can we swapped with any seasonal fruit, or experiment with herbs and spices like star anise, cinnamon, cardamom and more……

This is Hugh’s version of zabaglione: the heady but light-as-air Italian dessert. It does take a bit of whisking – an electric whisk is essential, unless you have the arms of Hercules – but it uses only three storecupboard ingredients to produce something very delicious and elegant. We’re assuming your storecupboard includes a bottle of brandy – Somerset cider brandy lends a special flavour here. Rich and creamy (although actually dairy-free), this pud is lovely served alone, or with a fairly plain little biscuit, such as a langue de chat or savoiarde, for dipping. It’s also stunningly good heaped over raspberries….

Mulled Pears

It always amazes Pam just how much fruit a gnarled old pear tree can bear in a good season. However, it’s still a little tricky to catch pears at their point of perfect ripeness – somewhere between bullet hard and soft and woolly. Never mind, should you find yourself with a boxful of under-ripe specimens, this recipe turns them into a preserve pear excellence . These pears are particularly delicious served with thick vanilla custard, or used as a base for a winter fruit salad. Alternatively, try serving them with terrines and pâtés, or mix with chicory leaves drizzled with a honey mustard dressing and crumbly blue cheese….
