Blackberry whisky is one of the finest of all infusions, a rival even to sloe gin. Do use cheap whisky for this recipe as there is a special pit in hell for those who drink good whisky in any way other than on its own. For those few who do not like blackberries and the many more who do not like whisky there is some good news. Given time – about a year, but two is better – the flavour mellows into something quite its own, not dissimilar from port, and with never a hint of peat bogs and barely a trace of blackberry crumble….

Bachelor’s Jam

This is also known as officer’s jam but it’s really not a jam at all. The German name, Rumtopf, seems far more appropriate for what is actually a cocktail of rum-soaked fruit. The idea is that the mixture of fruit, alcohol and sugar is added to gradually, as different fruits ripen throughout the growing season. This preserve is usually prepared with Christmas in mind, when the potent fruity alcohol is drunk and the highly spirited fruit can be served on its own or with ice cream and puddings. It’s not essential to use rum, by the way brandy, vodka or gin will work just as well….

Baked Brie with Truffle, Hazelnuts and Thyme

The only thing better than a ripe Brie, barely containing its creamy paste within the thin, white-bloomed shell, is a ripe Brie that has been baked and adorned with crushed hazelnuts, shavings of truffle and sprigs of thyme. All the textures and tastes meet and create a rich alchemy that gives you a feeling of utter wellbeing. You could also try topping the Brie with sweet caramelised onions or sharp fruits such as red berries or cranberries. I prefer to keep the cheese in the round wooden box it came in for baking….
