Mermaid’s Hot Chocolate

This spiced Ginger Hot Chocolate Recipe is the perfect antidote to a chilly winter's day, especially if you've braved a dip in the ocean—or if you're a mermaid, of course! The warming combination of cocoa, cinnamon, and ginger makes it ideal for cozying up after a cold adventure. Looking for a fun gift idea? Method

In a blender, combine the cocoa, grated chocolate, spices, stem ginger, and honey or maple syrup.

Add about 2 tbsp of boiling water from the kettle and blitz until the mixture is smoothly combined.

Add the milk and give it another blitz until fully blended.

Taste the mixture to check for the right balance of spice, sweetness, and heat. Adjust if necessary.

Pour the mixture into a pan and gently heat, stirring occasionally, until almost boiling.

Pour into a warmed flask or a couple of mugs, and enjoy your homemade Ginger Hot Chocolate!

Ingredients

  • 4–5 heaped tsp raw cacao powder or unsweetened cocoa powder
  • A good grating (1 heaped tbsp) dark chocolate (at least 70% cocoa solids)
  • 1 tsp ground cinnamon
  • 1⁄2 tsp ground ginger
  • 1⁄2 tsp ground cloves
  • 1⁄2 tsp ground mixed spice
  • 1⁄2 tsp chilli powder or a good pinch of dried chilli flakes
  • A knob of preserved stem ginger
  • 2 tsp honey, maple syrup, or syrup from the ginger
  • 500ml whole milk or oat milk

This recipe serves two—multiply as needed!
