In a blender, combine the cocoa, grated chocolate, spices, stem ginger, and honey or maple syrup.
Add about 2 tbsp of boiling water from the kettle and blitz until the mixture is smoothly combined.
Add the milk and give it another blitz until fully blended.
Taste the mixture to check for the right balance of spice, sweetness, and heat. Adjust if necessary.
Pour the mixture into a pan and gently heat, stirring occasionally, until almost boiling.
Pour into a warmed flask or a couple of mugs, and enjoy your homemade Ginger Hot Chocolate!
