Poached Pear with Yogurt Oat Biscuit

With warming spices, a tangy yoghurt twist, and the sweetness of the pears, it’s a dessert that’s sure to impress—and it’s simple enough to make at home!

Method

Prepare the pears: Peel the pears, leaving the stalk intact. Use a teaspoon to scoop out the seeds.

Poach the pears: Bring the Perry, spices, and sugar to a boil, then simmer for 5 minutes. Add the pears to the pan and cover with a circle of greaseproof paper. Simmer for 10-15 minutes, depending on the pear’s firmness, then set aside to cool.

Make the frozen yogurt: Mix the yogurt with lemon juice, zest, and sugar until dissolved. Place the mixture in the freezer, stirring every hour to break it up. Repeat 3-4 times until frozen.

Make the oat biscuits: Preheat the oven to 180°C (fan 160°C)/gas 4 and line a baking tray with parchment. Sift flour into a bowl and mix with baking powder, oats, and sugar. Melt the butter, syrup, and milk in a saucepan, then add to the dry ingredients. Mix well and shape into rounds. Spoon onto the tray and bake for 10-15 minutes or until golden. Cool for 5 minutes before removing from the tray.

Assemble and serve: Place a poached pear in a bowl, top with a generous scoop of frozen yogurt, and add one oat biscuit. Enjoy!

Ingredients

For the pears:

  • 4 pears
  • 500ml Perry or cider
  • 3 cloves
  • 1 cinnamon stick
  • 150g sugar

For the yoghurt:

  • 500ml full fat yoghurt
  • 100g sugar
  • 1/2 lemon zest and juice
  • pinch of salt

For the oat biscuits:

  • 75g wholemeal flour
  • 1 tsp baking powder
  • 75g porridge oats
  • 75g sugar
  • 75g butter
  • 1 tbsp golden syrup
  • 1 tbsp milk
